4C's Salad.

Easy to remember, easy to prepare. Easily a summer tropical treasure for all whānau who love fresh, quick and easy salads to accompany glorious summer barbeques. As the title suggests, the ingredients are 4 C’s: carrot, coconut, cashew and coriander salad.


  • 3 carrots, grated
  • 1 cup of coconut threads (more if you love it)
  • 1 cup of roasted cashews
  • Handful of coriander leaves to taste


  1. Mix everything together.
  2. Serve salad without a dressing, or drizzle some olive oil through it. Tastes fantastic with diced New Zealand oranges or with Peanut Heaven Salad Dressing.
