Roasted tītī (mutton birds) with pūhā and kūmara

As a result of a meeting in Invercargill earlier this month with our mates at Healthy Families, our CEO Leonie was met with an exceptional display of hospitality. Leonie came away from the meeting with rekindled relationships, a briefcase in one hand and a bucket of tītī in the other. Our Finance Lead, Matire Seath shows us how to cook these salty delicacies in this recipe.

Ingredients

2 tītī (mutton birds)
4 kūmara
big bunch pūhā

Method

1. Bring the tītī to the boil and simmer for 30 minutes. Drain water from pot and add fresh boiled water from the jug. Repeat this process two more times
2. Remove tītī from pot (reserving water) and place in a roasting dish. Bake at 180℃ for 30 minutes.
3. While tītī are in the oven, clean and add fresh pūhā and kūmara to the pot of reserved water. Bring to the boil and simmer for 15 minutes.
4. Add the pūhā and kūmara to the plate along with roasted tītī. Enjoy!!
